Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
In a large mixing bowl, beat the softened butter and sugar together with an electric mixer on medium speed until creamy and smooth, about 2-3 minutes.
Beat in the egg, vanilla extract, and almond extract (if using) until fully combined
In a separate bowl, whisk together the flour and salt
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix
Roll the dough into 1-inch balls and place them on the prepared baking sheets about 2 inches apart. If desired, flatten each ball slightly with the bottom of a glass or press with a fork for a pattern
Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers should remain pale.
Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely
