Batata (sweet potato) truffles

  1. Cook the batata: bake or steam until very soft. Cool completely.

  2. Mash smooth: no lumps = truffle-quality “UX”.

  3. Mix base: sweet potato + nut butter + sweetener + vanilla + cinnamon + salt (+ cocoa if using).

  4. Add oat flour: mix in gradually until you get a dough that holds shape (soft but not sticky).

    • Too wet? add 1–2 tbsp more oat flour.

    • Too dry? add 1 tbsp milk/water.

  5. Chill: 20–30 minutes (firms up, easier rolling).

  6. Roll: form 1-inch balls.

  7. Coat: roll in cocoa/coconut/nuts, or dip in melted dark chocolate.

  8. Set: refrigerate 30 minutes if dipped
